Macaroni Pasta in Creamy Cauliflower Sauce

Ingredients

Serves : 2
  • 1 cup Macaroni Pasta


  • 4 cloves Garlic


  • 2 Walnuts


  • 1 tsp Dried Oregano


  • 1 Green Chilli


  • 4-5 Black Olives


  • 1/2 cup grated cheese


  • 1/2 cauliflower, cut into florets


  • 1/2 cup milk


  • 1 tsp salt


  • 1/2 tsp black pepper powder


  • 1 tsp cooking oil

Directions

  • Cut the cauliflower into small sized florets and soak them in water. Wash the florets thoroughly, drain them and keep it aside.
  • Heat 1 tsp oil in a pan, add in the garlic, green chilli, cauliflower florets, sprinkle some salt and saute till it is roasted and has a charred look.
  • Once the cauliflower is roasted, set it aside to cool. Once cooled, blend it in a blender with milk to a fine smooth paste. Keep the roasted cauliflower pasta sauce aside.
  • To cook the Pasta, in a large pot, add water and bring it to a boil. Once the water has boiled, add a teaspoon of salt.
  • Add the Macaroni pasta to the boiling water and allow it to cook the boiling water until it is cooked. This process should take a good 12-15 minutes. Keep stirring the pasta occasionally to avoid sticking to the bottom of the boiling vessel.
  • Once the Macaroni pasta is cooked, drain the water and run the cooked pasta under running water to stop the cooking process. Drizzle some oil on top of pasta and make sure to coat all of the pasta with the oil.
  • Now take a pan and dry roast the walnut until crisp.
  • Transfer the roasted walnuts to a rolling board and crush it unevenly and keep aside.
  • Now in the same pan, add 1 tsp oil. Add the cauliflower paste to the oil and stir well.
  • Add the cooked pasta and mix with the sauce.
  • Add oregano and black pepper powder.
  • Let the Macaroni Pasta in Creamy Cauliflower Sauce simmer for a few minutes until the sauce gets well coated in the pasta. Once done, turn off the heat, check the salt and spices and adjust according to taste.
  • Transfer the pasta to serving bowls, sprinkle the walnuts. Add some more crushed black pepper, grated cheese, olives and serve hot.
